Revise: Protein PropertiesA foam contains gas bubbles dispersed in a liquid. Whisking eggs incorporates air and mechanically denatures some of their proteins. The proteins unfold and arrange themselves around the bubbles, forming films that help stop the bubbles from immediately merging or escaping.
