The temperature at the centre or thickest part of a food, rather than its surface or the surrounding oven.

Revise: Preparing, Cooking and Serving FoodFor thorough cooking, FSA guidance gives a core temperature of 70°C for 2 minutes, or an equivalent combination such as 75°C for 30 seconds. The time matters as well as the temperature.
Distinguish the oven temperature from the food’s core temperature. A hot oven does not prove that the centre is safely cooked.
