Covering the outside of food with another ingredient, such as breadcrumbs, to change its texture, flavour or appearance.

Revise: Preparing and Shaping MixturesCoating adds a layer to the outside of food. It differs from binding, which holds the mixture itself together. A fishcake can therefore be both bound with potato and coated with breadcrumbs.
Link each technique to its purpose: equal-sized portions support even cooking; binding holds a mixture together; coating changes the outside texture.
Distinguish binding from coating. Mashed potato can bind a fishcake mixture, while breadcrumbs on the outside form its coating.
Do not assume that a golden coating means the centre is safely cooked.
