When explaining conservation of mass, state that the number and identity of the particles do not change. If gas can escape from an open container, distinguish the mass remaining in the container from the mass of the whole system.
When explaining conservation of mass, identify the system: in an open container, vapour may escape, so the measured mass of the material left behind can decrease even though total mass is conserved.
