Revise: Food Production StagesUHT milk has been heated to a higher temperature for a shorter time. UHT stands for ultra-high temperature. Combined with packaging that prevents contamination, the treatment allows unopened milk to keep without refrigeration.
Consider both temperature and heating time: UHT uses a higher temperature but causes less sensory change than prolonged in-container sterilisation.
