Tenderising

Chicken tikka is an example: a yoghurt marinade combines tenderising with flavours from ingredients such as garlic and spices. Kiwi, pineapple and papaya can also be used as meat tenderisers, although not all tenderising works by the same mechanism as an acidic marinade.
