Revise: Judging and Modifying Sensory PropertiesA jus, pronounced ‘zhoo’, is traditionally an unthickened sauce made from the natural juices of a roast, usually with stock added. It brings the flavour and aroma of the cooked meat into the sauce served with it. Unlike a flour-thickened gravy, it is served without a starch thickener.
